You have two choices. First, you can contact your local district attorney's office and they have a bad check program. It is a crime to issue bad checks, as such, they will help you collect. However, it may take a long long time.
Second, you can sue them. You may be entitled to treble (triple) damages. If the amount is small, you can use the small claims court where you can go without an attorney and get a trial date within a month or so.
